Stinger Sauce

Speech Pathology and Audiology staff member Dave Gleason’s special sauce is served at the joint Department of Speech Pathology and Audiology-Speech Pathology and Audiology Alumni Chapter tailgate, a multi-year winner of the coveted Golden Spatula for best Homecoming tailgate.

Ingredients:

24 ounces yellow mustard

1 large jar sliced jalapeños, drained and finely chopped

Add the following ingredients to taste (approximate amounts are listed in parentheses):

  • cider vinegar (1/3 cup)
  • brown sugar (1/3 cup)
  • Dijon mustard (1/3 cup)
  • spicy ground mustard (1/3 cup)
  • garlic powder (1 tablespoon)
  • onion powder (1 tablespoon)
  • cayenne pepper (1 teaspoon)
  • Yucatan Sunshine Habanero Pepper Sauce (2 tablespoon)
  • water as needed to thin and prevent burning

Combine all ingredients and heat on low until sugar is dissolved and all ingredients are incorporated. Taste and adjust seasoning—you want a balance of heat, sweet and zip.

Jar and allow to stand in refrigerator at least 24 hours. Flavors mature with time.

Great on dogs, brats, burgers and even steamed or grilled cauliflower. Also good as a barbecue sauce on chicken or pork--baste on meat for a few minutes before removing from grill.
